Maximum yield in injection – 0% weight loss
In injection applications, OPTISAN-9070 significantly improves water retention. Comparative tests with marinated chicken breast showed: while the control sample with salt solution lost 4% of its weight after 24 hours, the sample treated with OPTISAN-9070 remained stable (0% loss). Even after cooking, weight loss was significantly lower (14.5% vs. 23.9%). The result: juicier products, higher yield, and scalable, cost-efficient processing – all without phosphates.
Less drip loss, more yield in immersion
In immersion processes, OPTISAN-9070 increases product yield by up to 10% and reduces drip loss by more than half. Even after cooking, weight stability was maintained with cooking losses below 15%. This ensures a process-safe, phosphate-free solution for clean-label concepts – with consistent texture, high efficiency, and reliable quality across all batches.
